Grease interceptors (grease traps) are mandatory for any commercial kitchen that produces fats, oils or grease — councils require regular pump-out and maintenance records as a condition of trade waste approval. Gas appliances in commercial kitchens must be installed and certified by a QBCC-licensed gas fitter. Backflow prevention devices on potable water supplies must be tested annually. Do I need a licensed plumber to connect my commercial kitchen equipment in Queensland?
Yes. Under the Plumbing and Drainage Act 2018 (Qld) and the Standard Plumbing and Drainage Regulation 2019, all plumbing connections — including hot and cold water supply to commercial dishwashers, coffee machines, glass washers, ice machines, combi ovens and prep sinks — must be carried out by a QBCC-licensed plumber. All gas connections to commercial ranges, fryers, char grills, wok burners and combi ovens must be carried out by a QBCC-licensed gas fitter. What is a grease trap and does my venue need one?
A grease trap (or grease interceptor) captures fats, oils and grease before they enter the council sewer network. Under Queensland local government trade waste agreements (issued under the Water Supply (Safety and Reliability) Act 2008), any commercial kitchen that produces FOG — restaurants, cafes, pubs, clubs, hotels and food manufacturers — is required to install an approved grease trap. The size and type of trap required depends on your kitchen's output and the council's trade waste specifications. We assess your kitchen, specify the correct grease trap, arrange council trade waste approval and install to specification.
How often does a grease trap need to be cleaned?
Most council trade waste agreements require grease traps to be inspected and pumped out every 4–12 weeks depending on the volume of FOG your kitchen produces. Failure to maintain your grease trap can result in council fines, trade waste agreement suspension and blocked drains. We offer scheduled maintenance programs where we inspect, clean and document each service — providing the records your council requires.
Can you work around our trading hours to avoid kitchen downtime?
Yes — we specifically schedule commercial kitchen plumbing and gas work outside your service windows. For most hospitality clients, this means early morning (before mise en place), late night after close, or on your dark day. We confirm the schedule with your kitchen manager in advance and have all materials on hand to complete work in a single visit wherever possible.
What plumbing compliance certificates does my venue need in Queensland?
Hospitality venues require: (1) Form 9 compliance certificates for any new or modified plumbing and drainage work; (2) Gas compliance certificates for all gas appliance installations and modifications; (3) Annual backflow prevention device test certificates — provided to your water distributor; (4) Council trade waste compliance documentation for grease trap maintenance. Why does my commercial kitchen drain keep blocking?
Kitchen drain blockages in hospitality venues are almost always caused by grease accumulation, food debris or a combination of both building up in the trap, the waste line or the connection to the main drain. Contributing factors include: insufficient or undersized grease trap, staff pouring fats and oils down the sink, fibrous food scraps entering the waste line, and infrequent drain cleaning. We diagnose the root cause using CCTV inspection, clear the blockage with high-pressure water jetting, and advise on grease trap sizing and maintenance schedules to prevent recurrence.
Can you connect a new coffee machine, glass washer or ice machine?
Yes. Coffee machine plumbing typically requires a filtered cold water supply line, a drain waste connection and sometimes a dedicated water softener or filtration system. Glass washers require a hot and cold supply and a waste connection. Ice machines require a cold water supply, a drain connection and adequate water pressure. We carry all common fittings and complete connections cleanly, with no damage to cabinetry or bar fitout. We also supply and install inline water filtration for coffee machines and glass washers on request.
